Our seafood is sourced from premium suppliers and all products are based upon the best local products. We receive our seafood fresh from the Sydney Fish Markets every morning and our products are guaranteed to be fresh daily. 


The below fish are what we have in store year round. When in season and at their best quality we also have other fish such as Mahi Mahi, John Dory and Kingfish.


FLATHEAD

Australian Flathead Oceana Traders

Few fish better reflect the range, variety and quality of Australian seafood than the humble flathead. In less than 30 years it has gone from lowly by catch to one of the most important and high-value table fish in Australia. There's no mistaking these fish, with their distinctive shape, literally a flat, triangular head with flounder like eyes on top, an extremely large mouth and a long round tail. Our flathead is wild caught within NSW and usually within a few 100km from Sydney. They are caught by trawls. The supply of flathead is abundant and considered a sustainable fish.


ATLANTIC SALMON

We are proud to stock Huon Aquaculture salmon. Based on the Tasmanian Huon river, the company was established in 1986 and has grown to become Australia’s signature producer of Atlantic Salmon. They are recognised around the world for the quality of their salmon and the ingenuity of their operations.

BARRAMUNDI

Cone Bay Barramundi Avalon Fish Shop

Barramundi is an iconic table fish revered as a quintessential Australian brand. This member of the sea perch family has a distinct pointed head, concave forehead, large jaw and rounded tail fin. It's beautiful in fillet form - cook it on a hotplate with a bowl over it so it will poach while the skin crisps up.

OCEAN TROUT

Location: Huon River, TAS
Catching Method: Ocean Pen
Habitat: Farmed

Native to the West Coast of the United States, ocean trout was successfully introduced to Australian in New Zealand in the late 1880s and became a staple in ocean farming in Tasmania a century later. It's as versatile as salmon and can withstand almost all cooking methods. 

Our ocean trout is from the Huon River in Tasmania and farmed by Huon Aquaculture. Read more about Huon here


YELLOWFIN TUNA

The yellowfin tuna, the world's most valuable tuna, is found throughout the tropical subtropical waters of both the east and west coats of Australia. It accounts for more than 35% of all tuna caught in Australia, and is typically caught by specialist longline fishing boats and handled with absolute care by fishers. The fish are graded according to their fat content, freshness and flesh colour. It is a highly prized sashimi fish, but over the past fifteen years or so, has also gained popularity as a grilling fish.


PINK LING

Ling are as close as we get in our part of the world to the fabled Atlantic Cod - both are eel like fish with a long, tapering body and small, snake-like head.

Pink Ling is caught abundantly around southern Australia and New Zealand year round. It is caught on the continental shelf and sloped at depths of 20 - 800 m  where they are ferocious hunters of squid and small fish.


SWORDFISH

Swordfish

Swordfish has a moist, meaty flesh that's sweet and delicate, mild yet flavoursome. It is most commonly available as fillets. It can take high heat, so it's perfect barbecued and charred and will also hold its form in a soup, curry, stir fry or pie. 

The Australian swordfish fishery is the world's only certified sustainable swordfish fishery. the quality is second to none. Most is caught off the east coast of Australia, from the coral Sea in the north to southern New South Wales.


SNAPPER

Snapper is one of Australia's premier table fish and so is highly sought after. It's deliciously tender white flesh and sweet, mild flavour make it one of our most popular and versatile fish. 

The smaller the snapper the sweeter its flesh; the larger or older the snapper, the gatherer and more brackish flavour.


WILD SOCKEYE SALMON

Sockeye Salmon (also known as red salmon) is native to the waters in the Northern Pacific Ocean. We independently import our wild sockeye salmon from The Fraser River within British Columbia. 

The wild sockeye salmon is highly sought after for its health benefits including being rich in omega-3 fatty acids, high in B vitamins and loaded with potassium and Selenium just to name a few!

Our sockeye is sold frozen in either full sides or single fillets. Please enquire in store about its availability.


MUSSELS

Spring Bay Seafoods’ award winning mussels are the popular choice from fine dining to simple home cooked meals. Spring Bay Mussels are highly sought after by mussel lovers for their plump meaty texture and sweet flavour.

Spring Bay Seafoods process mussels to a ready to cook state. The ‘clean shaven’ mussels are packed in a Modified Atmospheric Pouch to keep the mussels alive and fresh for longer and retain the ‘just harvested’ quality.


COOKED TIGER PRAWNS

We source our cooked tiger prawns from North Queensland farms. We take pride in delivering the freshest, highest quality prawns to our customers and will choose from farms who yield the best quality at different times of the year. 

Typically cooked tigers are famous for their crisp bite or ‘snap’ and a pleasant sweet, juicy taste. Their moist texture makes them very versatile and well suited to all methods of cooking. You can throw them on the barbie, make a light prawn salad, or add them to your risottos, pastas or stir-fries. The choice is yours – with so many flavour options such as lemon, garlic or chilli.


SYDNEY ROCK OYSTERS

The Sydney rock oyster is without a doubt one of the world's great eating oysters. It has a lasting, deep rich and sweet flavour that's unknown in other oysters.

Generally speaking, in the summer months the best oysters are found in north coast of New South Wales, and in the winter months in the south coast of New South Wales.
